Simple Mango Salad

2 cups baby spinach leaves, washed
2 ripe mangoes, flesh peeled and sliced
3 spring onions, finely sliced
75g macadamia nuts, toasted and roughly chopped
4 large mint leaves, roughly chopped
½ a lime
1 Tbsp extra virgin olive oil
pinch of sea salt
cracked black pepper

Arrange the spinach, mango, spring onions, macadamia nuts and mint in your salad bowl or on your serving plate. 

Just before serving, squeeze the juice from the lime and drizzle the oil over the salad. Sprinkle on with salt and add the cracked pepper. Toss the salad to coat.

Serves 4-6 as a side.
