Sumac Roasted Brussels Sprouts & Cauliflower
½ Head of cauliflower
About 15 brussels sprouts
2 Tbsp extra virgin olive oil
½ tsp sumac
Zest of ½ a lemon
100g Fetta cheese, roughly diced
Preheat oven to 180°c.
Cut the cauliflower into florets and place into a baking dish with the whole brussels sprouts. Drizzle the oil over the vegetables and sprinkle on the sumac and lemon zest. Toss the vegetables to coat evenly.
Place the dish in the oven and bake for 45 minutes, giving the vegetables a good stir 2-3 times during the baking time to ensure even browning. When there is 15 minutes of baking time left, add the fetta to the dish.
Serves 3-4 as a side dish.
