500g turkey mince
3/4 cup fresh breadcrumbs
2Tbsp fresh basil, chopped
1 carrot, grated
1 clove of garlic, crushed
pinch of salt and ground black pepper
2 Tbsp olive oil
400g tin of diced tomatoes
2 Tbsp tomato paste (no added salt)
Pasta of your choice and Parmesan cheese to serve
In a large bowl mix together the turkey, eggs, breadcrumbs, basil, carrot, garlic, salt and pepper.
Heat the oil in a large fry-pan over medium-high heat. Roll the turkey mixture into balls, slightly smaller than the size of a golf ball, and place each one as you make it into the fry-pan. Turn the balls until they are browned all around.
Pour the diced tomatoes over the meatballs. Add the tomato paste to the pan and very gently stir it into the diced tomatoes, taking care not to break up any of the balls. Reduce the heat to a gentle simmer. Cover the pan and simmer for 15 minutes, or until the balls are cooked through, turning the balls once or twice during this time.
While the meatballs are simmering, put you pasta on to cook, as per the packet's instructions.
Serve on top of pasta with Parmesan cheese and extra chopped basil if you wish.
